Chef Tony Demes:
After growing up in New York and working under chefs Thomas Keller at Rakel, Micheal Romano at La Caravelle, Roland Cheneau at Le Chantilly, and David Bouley at Bouley, Tony decided to move to Portland, Oregon.
In 1995, he opened Couvron in a small house on SW 18th Avenue in Portland. Couvron achieved many accolades during its 8-year run such as AAA Four Diamonds from 1999 to 2003, Mobile Guide 4 Stars 2000 to 2003, Gourmet Magazine Top Table for Portland 1997 and 1999, and Wine Spectator Award of Excellence 1996 to 2001. Tony is the only chef in America to ever achieve a rating of "30" for food from the Zagat Guide for both 1997 and 1998.
After opening Couvron NYC in 2005, Tony realized his heart remained in the Pacific Northwest. In 2010, he, with his wife Debbie, returned to Portland where they opened Noisette.
